Grow-your-own Butternut Squash

Butternut SquashYou may remember that I have been trying to grow some veg without a proper veg patch this year (see here for previous posts on the subject)! Well, I recently harvested my butternut squash and thought you’d like to see them. In the end I had only 2 fruits (off a single plant), but those 2 have done OK and, for my first attempt and considering they were grown in an old sink (!), I’m pretty chuffed! As you can see they were a fair size, both about the size of a large grapefruit. They weigh 1.1kg altogether so now I’ve got something to aim for next year. They are currently on my windowsill ripening off, but they can be stored a long time (3-4 months) in a cool place so if my harvest had been bigger I would not be having to eat them all at once!

I have tracked down a recipe for Squash and Ginger Cake and if it turns out to be as delicious as it sounds I will post the recipe!
